Brussels Sprout Salad

I get it, most people don’t love brussels sprouts! It’s okay, you don’t have to be to love them to love this brussels sprout salad. Promise. Brussels are filled with vitamin C, fiber, magnesium, iron and potassium. They are super good for you and will fill you up quickly!

This salad has been a staple in our home for a few years now.  Even the kids request me to make it. It’s a perfect side dish to bring to to Thanksgiving, or any gathering because you can add the dressing and let it sit without worrying it’ll be soggy by the time everyone is ready to eat. Brussels Sprout Salad Recipe:

Shaved Brussels Sprouts Don’t cook them. Just dump the bag into your bowl. I get mine at Trader Joe’s but have also seen them at Target. One bag makes about 5 servings.

Tomatoes I half mine and like to get cherry or an heirloom variety for color.

Lemon One, juiced

Pepper Fresh Ground, as much as you like

Bacon (you can also use pancetta, or a combo of both) | I use microwave bacon and crisp 6-7 strips and crumble

Fresh Jalapeño Thinly sliced and totally optional if you don’t like heat. You can also just have it on the side for those who like it. My kids do not like it in theirs.

Caesar Dressing I prefer an oil based vs a creamy dressing. Trader Joe’s makes a great one shown here. Add the amount you like. Because the sprouts are hearty, you may feel like you need to add extra dressing. I personally don’t love much dressing and just add enough for taste.

Shaved Parmesan Cheese Add how much you like

That’s it. Just toss everything well with the dressing already on before you serve. I don’t measure ingredients, I just eyeball everything I add. To turn this salad into a dinner, add rotisserie chicken or grilled shrimp. Try it and let me know what you think!
