Chicken Tomatillo Soup

Have you ever had the chicken tomatillo soup from Nordstrom Cafe? It’s really good! So good, I dissected the soup and created my own version. Not going to lie, I think mine is even better than Nordstrom. For real! This is a clean and healthy meal, everyone will love! The key is making your own TOMATILLO SALSA! It adds that fresh tangy pop of flavor I love in a Mexican soup. Chicken Tomatillo Soup Recipe:

INGREDIENTS:

Mirepoix Mix from TJ’s (it’s just carrot, celery and onion, chopped) My guess the amount in the mirepoix mix is 4 stalks of celery, 3 medium to large carrots, whole white onion.

2 cartons of Organic Chicken Stock (I buy mine at Costco)

2 cups Shredded Chicken Breast ( I buy rotisserie )

1.5 cups Fresh Tomatillo Salsa

1 large can of Hominy (a certain type of canned corn found in the mexican food aisle) Hominy makes the soup SO SO good.

Avocado and Limes for garnish

DIRECTIONS:

Sauté your mirepoix in your soup pan for 5 minutes. You can add a little olive oil if you want, but you don’t need to. Next add your broth and bring to a boil. After it begin to boil, turn the heat down to medium and let it cook until all veggies are soft (about 8-10 mins). Next add your chicken, can of hominy (drained) and let everything simmer for an additional 20 mins. Right before you are ready to serve stir in your tomatillo salsa. Garnish will sliced avocado and a squeeze of fresh lime.
