I am all about easy meals! You know how much I love TRADER JOE’S, it’s my favorite place to grocery shop. Whether you have a TJ’s by you or not, you can easily adapt this recipe wherever you shop. Tonight’s dinner is simple, delicious and a family staple: Vegan Pesto Pasta!
TRADER JOE’S VEGAN PESTO PASTA
1 Box of pasta. You can use chick pea pasta, brown rice pasta, anything you like!
1 Carton of Trader Joe’s Vegan Kale Pesto (or any pesto you like)
Cherry Tomatoes – halved ( I use about 30 and cut in half)
Salt & Pepper to taste
Fresh Mozzarella Balls
Fresh Basil – finely sliced for garnish
Avocado Oil or Olive Oil Spray
Pre-heat your oven to 400 degrees.
Half tomatoes and place on baking sheet. Toss in a little oil. Add salt & pepper.
Once the oven is heated, cook the tomatoes for 8-10 minutes
Bring pasta water to a boil and cook pasta through.
Once the pasta is cooked, drain water and toss with carton of pesto sauce.
Rinse and strain the mozzarella balls. Salt and pepper them generously.
Assemble pasta bowls and top with tomatoes, mozzarella and fresh basil.
*the most time consuming part is waiting for your water to boil. Once the pasta and tomatoes are cooked you are ready to eat in 5 mins. This feeds our family of 6. Double for leftovers. It doesn’t have to be vegan, that’s just what Trader Joe’s Pesto Sauce is. You can add grilled shrimp or chicken!
